Maybe you’re following a candida diet, or you’re sensitive or allergic to yeast and molds. Recently, shortages of yeast during the Coronavirus quarantine also pushed many home bakers to explore yeast-free alternatives. Whatever your reason, yeast-free gluten-free breads are both practical and tasty, and I have several easy recipes for you here at gfJules.com.
Baking Bread with Other Leavening Agents
The key to successful yeast-free breads is using chemical leavening agents instead of yeast. When you hear “chemical,” think of familiar pantry staples: baking soda and baking powder. These produce carbon dioxide through chemical reactions, creating lift and air pockets similar to what yeast provides, but much faster and without fermentation.
Bakers’ yeast is a living organism that produces carbon dioxide as it feeds on sugars and ferments over time, resulting in the classic bready aroma and airy crumb. Chemical leaveners create gas by reacting with moisture and/or acid, so you get rise and texture without the yeasty flavor and the long proofing time.
Many breads are delicious when made with baking soda or baking powder in place of yeast. A simple guideline for substitution: replace the amount of yeast called for with an equal amount of baking powder. For example, one packet of yeast (2 1/4 teaspoons) can be swapped for 2 1/4 teaspoons of baking powder.
If you don’t have baking powder on hand, you can use baking soda plus an acid—such as lemon juice or white vinegar—in equal measure to the amount of baking soda, or make your own baking powder. Either double-acting baking powder or the baking soda + acid method will generate the bubbles that give dough lift and the air pockets that make bread.
Expect a few differences compared with yeast-leavened bread: there won’t be a yeasty aroma or flavor, and there’s no need for rise time. That makes yeast-free recipes quicker and often simpler, while still yielding satisfying results.
