Buffalo-Roasted Cauliflower Steaks with Blue Cheese Dressing

Buffalo Roasted Cauliflower Steaks w/ Blue Cheese Dressing

An unexpected, crowd-pleasing side for weekend BBQs or a satisfying vegetarian main.

Ingredients:

  • 2 heads cauliflower, sliced vertically into 1/2–1 inch thick steaks (about 4 to 6 steaks total)
  • 2–3 tablespoons avocado oil or extra-virgin olive oil, for brushing
  • 1 cup buffalo-style sauce (choose one with simple, high-quality ingredients)
  • 1 teaspoon garlic powder
  • Sea salt and freshly ground black pepper, to taste
  • Fresh parsley leaves, minced, for garnish

Instructions:

Preheat the oven to 425°F (220°C).

In a small bowl, whisk the buffalo-style sauce with the garlic powder until combined.

Arrange the cauliflower steaks on a large rimmed baking sheet. Brush both sides lightly with oil and season with sea salt and freshly ground black pepper.

Bake the steaks for 10–15 minutes on the first side, until they begin to brown at the edges. Remove the sheet from the oven, brush the exposed side generously with the buffalo mixture, then carefully flip each steak and brush the other side.

Return the cauliflower to the oven and bake for another 8–12 minutes, or until the steaks are tender and caramelized to your liking. Cooking time will vary with thickness.

When done, transfer the steaks to a serving platter and sprinkle with minced fresh parsley.

Blue Cheese Dressing:

Combine 1 cup plain Greek yogurt with high-quality blue cheese crumbles. Stir gently to keep some larger crumbles intact for texture. Taste and adjust with a pinch of salt or a squeeze of lemon if desired.

Serve the buffalo roasted cauliflower steaks warm with the blue cheese dressing on the side for dipping or drizzling.
