The last few weeks have felt surreal. Like many of you, I’ve been improvising meals from pantry staples, sewing masks from fabric scraps, and putting the finishing touches on my newest book. With family staying in their own homes this year, it will be just the two of us for Easter, so I’m planning something simple, comforting, and a little special: this ham-and-egg casserole.
This casserole is quick to assemble and flexible with ingredients. Use chopped cooked ham if you have it, or substitute a plant-based ham product if you prefer. I like Yves Veggie Bacon when I can find it—it delivers a ham-like flavor without using meat.
Serve this bake for brunch or dinner any time of year. It pairs well with steamed asparagus and a bright cranberry sauce for contrast.
Sunday Brunch Ham and Eggs: Comfort Food Casserole

Ingredients
- 1 1/2 cups frozen hash brown potato shreds
- 2 cups chopped, cooked ham or veggie ham
- 5 large eggs
- 1 teaspoon instant minced onion
- 1 cup milk
- 1 cup shredded smoked gouda or other smoked cheese

Method

Preheat oven to 350°F (175°C). Spray the baking dish with nonstick spray.

Spread the frozen hash browns evenly in the prepared dish. Top with the chopped ham or veggie ham.

In a bowl, whisk together the eggs, milk, minced onion, and shredded smoked cheese. Pour the mixture gently over the potatoes and ham to distribute evenly.

Bake 60–75 minutes, or until a knife inserted in the center comes out clean and the top is set and golden.

Remove from the oven and let rest 5 minutes before slicing and serving.
