Start by quickly sautéing the onion, bell pepper, and poblano in olive oil with garlic—just until they soften slightly. Let the vegetables cool before combining them with the ground turkey and seasonings so the mixture binds well without warming the meat.

If you prefer a spicier burger, add minced jalapeño and a pinch of cayenne or chili powder to the mixture.

How to make Southwest Turkey Burgers

I like to pile on fresh toppings. For these burgers I used grilled red onion, a slice of heirloom tomato, avocado, Swiss cheese, and a drizzle of ranch dressing. Ranch is optional—use your favorite condiments. One of us prefers a splash of barbecue sauce instead; pick what you enjoy.

This recipe yields four burgers, but it scales easily. Make a double or triple batch and freeze extra patties wrapped individually for quick meals later.

You can cook these outside on a grill or on a hot grill pan indoors. A grill pan is handy for quick weekday dinners and gives nice sear marks.

  • Salt and Pepper
  • 1 tablespoon finely chopped Flat Leaf Parsley

Instructions

  • Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add the white onion and sauté 1 minute, then add the red bell pepper, poblano, and garlic. Season with salt and pepper and sauté about 2 minutes until the vegetables are slightly softened. Remove from heat, transfer to a bowl, and let cool.
  • When the vegetables are cool, combine them with the ground turkey, parsley, paprika, garlic powder, and onion salt. Mix gently until just combined.
  • Divide the mixture into four even portions and shape into flat patties slightly larger than your buns.
