Chicken and Broccoli Skillet with Garlic Butter Sauce

img 8567 1

Easy low-carb chicken, broccoli, and cheddar skillet — a simple, satisfying dinner that combines plenty of protein with a generous serving of vegetables. This one-pan meal brings together classic flavors: tender broccoli and sharp cheddar, boosted with shredded rotisserie chicken and savory bone broth for extra depth and protein. Using rotisserie chicken makes the prep and cooking fast, perfect for busy weeknights.

The skillet is naturally gluten-free, grain-free, soy-free, and nut-free. If you need a dairy-free option, substitute butter with olive oil or vegan butter and choose a meltable dairy-free cheese.

Description

Easy low-carb broccoli, chicken, and cheese skillet — a quick, flavorful dish that comes together in one pan. The shredded rotisserie chicken keeps prep time short, while bone broth adds savory richness. This is a great option for a nutritious weeknight meal that’s both filling and low in carbs.

Ingredients

Scale
  • 2 tbsp unsalted butter
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1 head broccoli, cut into florets
  • 1 rotisserie chicken, shredded
  • 3/4 cup bone broth (or regular broth)
  • 1 + 1/2 cup shredded cheddar
  • Salt and pepper, to taste
  • Optional: red pepper flakes

Instructions

  1. Heat a large, high-sided skillet with a lid over medium heat.
  2. Melt the butter, then add the diced onion and minced garlic. Sauté until the onion is soft, about 3–4 minutes.
  3. Add the broccoli and the broth, stirring to combine. Stir in the shredded chicken, season with salt and pepper (add red pepper flakes if using). Reduce the heat slightly, cover the pan, and cook until the broccoli is tender, about 10–12 minutes.
  4. Sprinkle the shredded cheddar over the top, replace the lid until the cheese melts, then serve immediately.
