This drink channels the cozy nostalgia of holiday sugar cookies: almond and vanilla notes, a touch of sweetness, and just enough butter flavor to make it feel indulgent.

If you don’t have imitation butter flavoring: Use a pinch of unsalted butter instead. About 1/4 teaspoon of melted unsalted butter will provide the same warm buttery note without changing the recipe substantially.

Make ahead tip: The sugar cookie simple syrup can be prepared in advance and stored in the refrigerator for up to three days. When you’re ready, just warm and assemble the latte.

Ingredients

Sugar Cookie Simple Syrup:

1/4 cup water

2 tablespoons granulated sugar

1/4 teaspoon vanilla extract

1/4 teaspoon almond extract

1/8 teaspoon imitation butter flavoring, or 1/4 teaspoon unsalted butter

Sugar Cookie Simple Syrup (prepared)

3/4 cup almond milk or vanilla almond milk

2 oz brewed espresso

Sprinkles for serving (optional)

Instructions

To make the Sugar Cookie Simple Syrup:

1. In a small saucepan over medium heat, combine water, sugar, vanilla extract, almond extract, and the butter flavoring (or melted butter). Bring to a gentle simmer, stirring occasionally, for about 3–5 minutes until the sugar dissolves and the flavors meld. Remove from heat and let cool. Reserve until ready to use.

To assemble the Sugar Cookie Almond Milk Latte:

2. Heat the almond milk in a medium saucepan over medium-low heat until small bubbles form around the edges, about 3–5 minutes. Do not boil.

3. Froth the warmed milk using a frothing wand or other aerator for about 1 minute, tilting the pan slightly to create a thick, creamy foam.

4. Pour the brewed espresso into a mug and add the desired amount of sugar cookie simple syrup (adjust sweetness to taste). Top with the frothed milk and spoon any remaining foam over the top.
