I was in Ireland recently and kept finding myself staring at some of the most spectacular sunrises and skies I’ve seen. This smoothie was my way of bottleing a little of that glow—sweet peach tones layered over raspberry blush for a pretty, sunrise effect in a glass.

Delicious Peach Melba in smoothie form! Vegan, paleo-friendly and banana-free, this recipe combines tart raspberries with sweet peach for a naturally sweet, dairy-free treat.
Ingredients
- 75 g / ¾ cup frozen raspberries
- 240 ml / 1 cup almond milk
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- optional: 1 tbsp maple syrup
- 1 peach, peeled and chopped
- 240 ml / 1 cup orange juice
Instructions
- Combine the frozen raspberries, almond milk, vanilla extract and lemon juice in a blender. Blend until smooth, adding a little more almond milk if the mixture is too thick. Taste and add the maple syrup if you prefer a sweeter result.
- Pour the raspberry mixture evenly into two glasses, filling each about halfway.
- Rinse the blender, then add the peeled, chopped peach and the orange juice. Blend until smooth and silky.
- Gently pour the peach mixture over the raspberry layer in each glass. Let it fall naturally to create a marbled, sunrise effect—don’t stir if you want the layered look.
- Serve immediately and enjoy the bright, fruity flavors.
