3-Ingredient Hazelnut Cacao Bars Recipe

For this recipe I keep things simple: just three ingredients and a food processor. The active time is only about five minutes, though you will need to soak the nuts and allow the bars to set in the freezer. Those waiting periods are worth it — simple, fast, and delicious.

Raw treats are incredibly easy to make, nutritious, and perfect for snacking. I always keep a well-stocked fridge and freezer so I have healthy options on hand.

Soaking the nuts is a step I recommend. Soaking raw nuts makes them easier to digest, improves nutrient absorption, and reduces enzyme inhibitors that can make nuts harder on the digestive system. Soaking can also soften nuts slightly, which helps when blending them into a smooth paste. Cover the nuts with warm water and a pinch of salt and leave them overnight. After draining, pat them dry with a clean towel. If you prefer, dry them in an oven or dehydrator; I usually towel-dry and keep the finished bars frozen to prevent spoilage since baking would remove the “raw” quality.

Note: I have a mild sensitivity to raw nuts, so even soaked nuts can cause slight itching or throat tightness if I eat too many. Take care if you have any nut sensitivities.

Ingredients

  • 1 cup raw hazelnuts
  • 3 tbsp cacao powder
  • 1/2 cup soft dates

Instructions

  • Soak the raw hazelnuts for about 7 hours or overnight, then drain and dry them. Place the nuts in a food processor and pulse a few times. Add the soft dates and cacao powder, then process until the mixture comes together into a sticky, uniform paste. Transfer the mixture to a sheet of parchment and press into a firm rectangle. If you like, sprinkle crushed hazelnuts on top.

  • Freeze the pressed rectangle until firm, then slice into bars. Store in the freezer or refrigerator to keep them fresh. Enjoy!
