Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • 1 ripe avocado
  • 1/4 cup sugar
  • 1 cup shredded carrot
  • 1 cup dried banana chips, plus 1/2 cup for the top
  • 2 eggs
  • 4 tablespoons butter, melted
  • 1 cup raisins
  • 1/2 cup flax seed (whole or milled)
  • 1 cup chopped kale
  • Handful of pumpkin seeds (optional)
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine the flour, baking powder, and salt in a bowl and set aside.

  11. Important: let the bread cool in the pan for one hour. Run a knife around the edges, place a plate or cutting board over the pan, and carefully invert the bread onto it.
