This simple, flavorful Mexican-style casserole layers refried beans, salsa, tortillas and cheese for a satisfying meatless meal. It comes together quickly and bakes to a bubbly, golden finish—perfect for busy weeknights or when you want an easy, crowd-pleasing dish.
Ingredients
- 1 (16 oz) can refried beans
- 3/4 onion, diced
- 5 (10 inch) flour tortillas
- 1 cup salsa
- 2 cups shredded cheddar or Mexican blend cheese
Instructions
- Preheat the oven to 375°F (190°C). Lightly spray a 9-inch pie pan or similar baking dish with nonstick cooking spray.
- In a saucepan over medium-high heat, combine the refried beans and diced onion. Cook for about 5 minutes, stirring occasionally, until the onion softens and the beans are heated through.
- Assemble the casserole by placing one tortilla in the bottom of the prepared pan. Spread roughly one-third of the bean mixture over the tortilla and dot with a few tablespoons of salsa. Top with a second tortilla, spread more of the bean mixture and sprinkle with some cheese. Continue layering tortillas, bean mixture, salsa and cheese, distributing ingredients evenly. On the final layer, finish generously with salsa and cheese.
- Bake in the preheated oven until the cheese is melted and bubbly, about 15–20 minutes. Let the casserole rest a few minutes before slicing to help it set.
Variation ideas: add sliced olives, chopped green chilies, or a handful of fresh cilantro after baking. Serve with sour cream, guacamole, or extra salsa if desired.
