Ingredients
- 1 yellow onion, diced
- 1 red bell pepper, diced
- 2 heads broccoli, cut into smaller pieces
- 3 large carrots, sliced
- 1 lb cubed chicken breast, cubed
- ¾ cup teriyaki sauce, any brand will work
- Cooked rice for serving
Instructions

Preheat the oven to 350°F (175°C).

Lightly spray a 9×13-inch baking dish with nonstick spray. Add the diced onion, bell pepper, broccoli, sliced carrots, cubed chicken, and teriyaki sauce. Stir until everything is evenly coated.

Bake for about 45 minutes, or until the chicken is cooked through and the vegetables are tender.
