Summer is officially here! Down in Florida it has felt like summer since April. I complain about the heat sometimes, but I’ll take it over a blizzard any day — this born-and-raised Florida girl isn’t very tolerant of cold!

I’ve been trying to jog and run more as I’m training with my friend Erica for the Disney Half Marathon in January. The heat makes it a challenge: up at 6 a.m. it can already feel like 80°F, and even after sunset (around 8:30 p.m.) it remains warm and humid.

When temperatures climb into the upper 90s, I try to plan workouts for overcast days or later in the evening once the sun goes down. Lately afternoon storms have helped too — I’ll wait until the rain stops and then head out. It’s not as blistering, but the humidity can be brutal.

Erica and I have been a little lax with training because our schedules conflict. A few weeks ago we signed up for a Sundae 5K on the beach at the last minute. Yes, a 5K that ends with ice cream sundaes — homemade ice cream and all the toppings you can imagine. We got up at 7 a.m., ran on the sand, finished in about 44 minutes, and rewarded ourselves with a delicious sundae.

After that race, neither of us have been consistent with workouts. Between work, blogging, chores, and the holiday, I slipped into a lazy streak. Guilty as charged — I binge-watched the last episodes of a few shows and got hooked. Once I start a show I tend to watch it until it’s finished, which doesn’t help my training schedule. On top of that I’ve been dealing with occasional insomnia. Some nights I’m up in the middle of the night and end up working before the sun rises.

To stay on track with healthy eating and exercise, we’ve limited Netflix nights and returned to meal prepping. For the Fourth of July we made these super-easy and flavorful barbecue turkey sliders. They’re built with lean ground turkey breast and topped with fresh veggies and healthy fats for a satisfying, nutritious meal.

Ground turkey breast is a great ingredient to include in your meals. It’s lean, versatile, and widely available in different cuts. Turkey is naturally low in fat and contains helpful nutrients like iron, zinc, and potassium. It also provides lean protein to help keep you feeling full longer — perfect for active days and grilling season.

  • 1 pound ground turkey breast
  • ¼ cup instant oatmeal
  • ¼ diced red onion
  • ¼ cup diced roasted red peppers
  • 1 egg
  • 1 tablespoon Worcestershire Sauce
  • 2 teaspoon coconut sugar or 2 teaspoon erythritol

  • 2 teaspoon chili powder
  • 1 teaspoon paprika
  • Green Leaf lettuce
  • Sliced red onion
  • Avocado

Instructions

  • In a medium bowl, combine the ground turkey, instant oatmeal, diced red onion, diced roasted red peppers, egg, Worcestershire sauce, coconut sugar (or erythritol), sea salt, chili powder, and paprika. Mix gently until everything is evenly incorporated.
  • Divide the mixture into eight equal portions and form each portion into a small patty for sliders.
  • Preheat the grill to medium heat. Cook the patties on the grill until the internal temperature of the turkey reaches 165°F (about 8–10 minutes), flipping once to ensure even cooking.
