We recently traveled to Pittsburgh and returned to find the chaffle craze in full swing. Chaffle makers are flying off shelves and recipes are everywhere. We took the trend and developed a savory version that keeps the easy, low-carb base but improves texture and flavor.

Ingredients
The basic chaffle batter is just egg and cheese. Many recipes use mozzarella or cheddar, but the straightforward egg-cheese mix can taste a bit “eggy.” To create a crisper exterior and a more waffle-like interior, Joanie adds a tablespoon of blanched almond flour and 1/4 teaspoon baking powder to the batter. These small additions give a better texture while keeping the recipe very low in carbs.



For this recipe we kept the chaffle savory. You can of course vary the batter—sweet versions use sweeteners, cinnamon, or vanilla. But for a sandwich-style chaffle, the almond flour and baking powder improve crispness and give a lighter waffle feel.
We expect many chaffle variations to appear; this BLT with avocado is our first savory take and a great introduction to the format.


Our BLT Chaffle with Avocado combines two favorites: waffles and BLT sandwiches. Use two chaffles as the “bread,” pile on crispy bacon, a fresh tomato slice, Bibb lettuce, and thinly sliced avocado (or a spoonful of creamy guacamole) for a satisfying low-carb breakfast or brunch sandwich.

Preparation Tips
You will need a waffle maker to make chaffles. We like the Dash Mini Waffle Maker because it makes a perfect 4-inch chaffle suitable for sandwiches and is inexpensive. Preheat the maker and follow these tips for best results:
- Use freshly grated cheese rather than pre-shredded bagged cheese for better melt and texture.
- Make sure the chaffle maker is fully preheated before adding batter.
- Avoid lifting the lid while cooking; timing is important—experiment once, note the time, and repeat for consistency. We found about 3½ minutes produces a nicely cooked chaffle.
- Let chaffles cool briefly on a cooling rack; they crisp on the outside while remaining tender inside.
- Chaffles freeze well. Reheat in a toaster or skillet for best texture.

For the BLT filling, we prefer crispy bacon. Cook it in the oven on a rack to drain excess fat or fry in a skillet and drain on paper towels. Use a generous amount of bacon, a crisp piece of Bibb lettuce, one thick slice of ripe tomato, and fresh sliced avocado. If you like more creaminess, swap the avocado for a spoonful of guacamole.

Ingredients

Instructions
- Chaffle
- Spray mini-waffle maker with cooking spray and preheat.
- In a small bowl, combine egg, grated cheddar, almond flour, and baking powder. Mix well (or blend briefly for a smooth batter).
- Pour batter into center of the hot waffle maker and spread gently to the edges. Close the lid and cook about 3½ minutes, or until set and golden. Adjust amount of batter to avoid overflow.
- Remove chaffle and let cool on a rack for a couple minutes so it crisps up. Repeat for the second chaffle.
- BLT with Avocado
- Assemble: place a piece of Bibb lettuce and a tomato slice on one chaffle, add strips of bacon, top with avocado slices, and cover with the second chaffle. For extra creaminess, substitute guacamole for sliced avocado.
- Plate and enjoy.
