How do you make Happiness Bread?

- Beat mashed sweet potato, eggs, cashew butter and cooled melted coconut oil together until smooth.
- In a separate bowl, mix coconut flour, tapioca flour, nuts, seeds, turmeric, baking powder and salt (reserve some nuts and seeds for the top).
- Fold the dry mixture into the wet ingredients until combined.
- Pour the batter into a lined and greased 2lb loaf tin, sprinkle reserved nuts and seeds on top and bake at 180°C / 160°C fan / gas mark 4 for about 50–55 minutes.
Sweet potato tip
Avoid peeling, cubing and boiling the sweet potato — much of the sweetness and nutrients leach into the water. Instead, cook the potatoes whole in their skins for better flavour and texture, then scoop or peel the flesh when cooled.
Two ways to prepare the sweet potato:
1. Oven Baked
- Wrap each sweet potato in aluminium foil and place in a roasting tin.
- Bake at 180°C / 160°C fan / gas mark 4 for 1–1½ hours, depending on size.
- Check doneness by pressing through the foil — the flesh should be very soft.
- Allow to cool slightly, unwrap and peel (the skin should come away easily), then mash the flesh and refrigerate until needed.
2. Instant Pot
- Add 250 ml water to the Instant Pot insert.
- Place a trivet or silicone sling in the insert and arrange whole unpeeled sweet potatoes in a single layer.
- Seal the lid, set to Pressure Cook for 15 minutes (plus pressurizing time) and quick-release when the timer finishes.
- Once cooled enough to handle, peel and mash the sweet potatoes.

Instructions
- Preheat the oven to 180°C / 160°C fan / gas mark 4. Line and grease a 2lb loaf tin.
- Beat the mashed sweet potato, eggs, cashew butter and melted coconut oil in a large bowl or mixer.
- Reserve a handful of nuts and seeds for the top.
- In a separate bowl, combine coconut flour, tapioca flour, remaining nuts and seeds, turmeric, baking powder and salt.
- Fold the dry ingredients into the wet mixture until well combined.
