👩‍🍳 How to fill a cake with cake filling

Follow a few simple steps to keep filled cakes neat and stable and to prevent fillings from leaking between layers.

A layer of cake being spread with a thin layer of buttercream.

For dark berry fillings that can stain cake slices, spread a thin layer of buttercream on each layer first to protect the crumb and color.

A cake layer being prepared for cake filling with a ring of buttercream to contain the cake fillings.

For soft fillings like whipped cream or fruit compotes, pipe a ring of buttercream around the edge to form a dam before spooning in the filling.

I build my buttercream dam 2–3 rings high so fillings stay contained when the next layer is added.

A filled cake with a thin crumb coat of buttercream.

When you place the top layer, some buttercream may squeeze out. Smooth it against the side with an offset spatula to seal the edges before applying a crumb coat.

For extra reassurance, chill filled cakes in the freezer for 10 minutes before applying a crumb coat. For a full layering demonstration, try the Cake Ring Method in my layering guide and watch the Blueberry Cake video where the filling starts at 0:41.
