Cinnamon Ginger Highball: Spiced Cocktail Recipe and Tips

I know fall weather is just around the corner—maybe even today. Cooler temperatures are coming, bringing crisp winds, changing leaves, and Oregon’s generous autumn fruit harvest (apples, pumpkins, squash). To welcome the season’s cozy flavors, here’s a cocktail that fits perfectly: the Ginger Highball with Cinnamon Liqueur.

I use cinnamon and ginger in cooking year-round, but there’s something especially comforting about a cocktail that highlights these warming spices. This drink is ideal for settling in: light a candle, wrap yourself in a cozy throw, and enjoy a mellow, spiced sip.

What is a Highball?

A highball is a simple mixed drink built on a spirit or liqueur and topped with a larger proportion of non-alcoholic mixer—think Jack & Coke or whiskey and soda. Highballs are refreshing and easy to drink: they offer flavor and warmth without overwhelming strength. This version uses cinnamon liqueur balanced with ginger ale and a couple of drops of cardamom bitters, served over ice.

I received a selection of aromatic liqueurs from Sukkah Hill Spirits to try, and their Besamim cinnamon liqueur stood out. It’s a well-balanced, spice-forward liqueur that tastes like autumn in a bottle. Besides cocktails, it’s wonderful added to desserts such as tiramisu or apple hand pies, but it truly shines in a simple mixed drink like this Cinnamon Ginger Highball.
