Fresh corn on the cob provides the best flavor and texture, but frozen corn works well too when fresh corn isn’t available. Boiling corn on the cob releases more flavor into the water, which makes the drink tastier once reduced and sweetened.
Corn Cheese – a Staple in Korean BBQ!
Corn cheese has become a popular side at Korean BBQ restaurants and trendy cafes. It’s an easy, comforting dish you can prepare at home to satisfy that cheesy, savory craving without leaving the house. It’s also cost-effective and adaptable to what you have on hand.
For the corn cheese I used freshly grated mozzarella because it melts beautifully, but you can substitute any melty cheese you prefer. The combination of butter, mayonnaise, and cheese makes the corn rich and creamy.
I used kewpie mayonnaise for its slightly sweet, umami-rich flavor and creamier texture compared to standard American mayo. If you don’t have kewpie, regular mayonnaise will still make a tasty dish.

Corn Cheese
- 2 cups corn (fresh is best; frozen or canned also work)
- 1 tbsp butter
- 2 tbsp kewpie mayonnaise (or regular mayo)
- 1/2 cup grated cheese (mozzarella or another melty variety)
- Salt
- Red pepper flakes
Sweet Corn Drink
- Granulated sugar
- Milk
Instructions
- Place the corn in a pot and add enough water to sit about a half inch above the corn. Boil until cooked. Reserve the cooking liquid — you’ll reduce it for the drink.
- After removing the corn, continue boiling the reserved liquid until it reduces and concentrates in flavor. Taste it; it should taste distinctly of corn and not watery. Keep it warm while you make the corn cheese.
- To make the corn cheese, mix the hot corn with butter, mayonnaise, and shredded cheese. Stir until well combined and season with salt and red pepper flakes to taste.
- Top the mixture with extra cheese and a drizzle of kewpie mayo for a glossy finish, then broil briefly if you want a bubbly, golden top.
- Pour a portion of the reduced corn liquid into a cup, add sugar and a splash of milk, and stir until smooth and creamy.
- Serve the corn cheese hot alongside the sweet corn drink and enjoy.
Notes
The drink shines with fresh corn on the cob, but frozen or canned corn will still produce a tasty beverage. Adjust sugar and milk to your preferred sweetness and creaminess.
